Vegan Lentil Soup… Delicious & Nutritious!

As a new mom, I have a newfound love for cooking with a Crock Pot. I love how easy it makes cooking and eating healthy at home without taking precious time away from my new little one. Today, I am sharing my simple vegan lentil soup recipe.

Ingredients:

1 package green lentils
1 small bundle of celery
8 oz box of mushrooms
1 whole yellow onion, chopped
2 russet potatoes, chopped
4 cups vegetable broth
2 cups water
2-3 handfuls of spinach
1 clove of garlic
1 tablespoon himalayan salt

1 tablespoon Herbs De Provence

Directions:

Combine ingredients into a Crock Pot and cook on high for 8 hours. Stir occasionally throughout the day. Enjoy!
